Gyokeres wasn't wrestling though, it was Guiu that was wrestling. If Guiu was looking at the ball and tried to win it, then we would have had a case for offside.

Agreed. Goal standing was correct. No way was Gyokeres preventing Guiu doing anything. Guiu was doing thst for himself by forgetting that knowing where the ball is should be a priority.
